Roasted Broccoli

Maybe this recipe is an "old one" for you. Well, I discovered this when doing the Whole 30 last year, and it's such a treat anytime, but especially when your foods are extremely limited. You NEED to try this, even if you don't like broccoli. My husband never liked broccoli, but now he craves this. I'm not kidding! I buy my broccoli in bulk we go through so much of it. 😂 Costco has bags of it already cut up and washed. Lifesaver! That's why I make it so often, because it doesn't take time! You can also do this recipe with a mix of cauliflower and broccoli.  I use a large sheet pan, and fill it up completely. I personally like to cut my broccoli in smaller pieces because it gets more crispy and more done.  Drizzle with olive or avocado oil (I use avocado). The amount depends on preference. Sprinkle with garlic powder & salt. Once again, the amount is whatever your preference is. The more you make it the more you'll know. :) Bake @ 425 for

Pulled Pork

In my opinion, it's hard to find a good crock-pot meal. Well, I found one for you, and it's SO easy! This recipe comes from Paleo Hacks, and you can find the official recipe HERE.  We rarely ever eat pork, so this was a treat for my husband. 😊 Tip: I bought one of those huge pork loin's from Costco. Since it's too large to fit into the crock-pot, I cut it in half and put the other half in the freezer for later. It was 8 pounds, so I had 4 pounds each time. I did a little extra seasonings for more flavor, but not extra of anything else.  2 to 4 pounds of pork loin 1 large onion, sliced 1/2 cup of beef or chicken stock 1 tsp salt 1 tsp garlic powder 1/2 tsp black pepper 1/2 tsp paprika 1 tsp chili powder 1/2 cup honey STEP 1: Put the pork in the crock-pot and cover with stock. I then patted the spices onto the meat, drizzled the honey, and then added the onions on top. STEP 2: Turn the crock-pot on low and cook for 8-10 hours. Use two forks

Paleo Poppyseed Dressing

Today I'm sharing our favorite salad dressing! I don't mind the plain oil and vinegar dressings, but my family isn't a huge fan of those. I have adapted the original non-healthy recipe and made it my own. 3/4 cup honey or maple syrup (or half & half!) 2 tsp dry mustard 2 tsp salt 1 medium onion 2 cups avocado oil (maybe olive oil would taste fine too, but I've never tried it) 3/4 cup vinegar- (I use apple cider vinegar)  2 tsp poppy seeds Mix all but poppy seeds and blend well in the blender. Then add poppy seeds and mix gently. Enjoy on a delicious bed of lettuce! :)

Cinnamon Muffins

On this snowy day, it's the perfect time to share this delicious Cinnamon Muffin recipe made with almond flour. This is seriously one of my favorites, and I make them often. They are so tasty and moist, and my boys love them! Yields: 10 muffins BATTER: 2 eggs 1/3 cup coconut milk (or plain yogurt) 1/4 cup maple syrup 1 tsp vanilla 2 1/2 cups almond flour 1/4 tsp salt 1/2 tsp baking soda STEP 1: Whisk the eggs, milk, maple syrup, & vanilla. Stir in the flour, soda & salt. STREUSEL: 3 tbsp honey 2 tbsp coconut oil (or butter) 1 tbsp + 1 tsp cinnamon 1/4 tsp vanilla STEP 2: Add the streusel ingredients in a separate bowl.  STEP 3: Fill the muffin tin 1/2 the way, add streusel in the center & fill the rest of the cup.  Bake for 25 minutes @ 315 degrees.  Finished Product. These are delicious for breakfast! Just a note: I do a lot of shopping at Costco and that's where I get my almond flour! 

Garlic Mashed Cauliflower {"Mashed Potatoes"}

We personally don't eat very many white potatoes... just occasionally. I created my own "mashed potatoes" recipe with cauliflower. The recipe is based off of Against All Grain's  from her first book, but I've changed it up a bit.  Serves 3-4 1 head of cauliflower 1 tablespoon oil (olive or avocado) 3 cloves of garlic, minced 1/4 cup almond milk (regular would work as well) 1 1/2 tablespoons butter or ghee (I use kerrygold) 3/4-1 tsp sea salt Dash of pepper STEP 1: Cut cauliflower up into florets, cover and steam in a saucepan with 1/2 inch of water for about 10-15 minutes, or until soft.  STEP 2: While that's cooking, mince your garlic into a small saucepan with 1 tablespoon of oil. Saute for a few minutes. STEP 3: When your cauliflower is done cooking, drain the remaining water and place it in your food processor.  STEP 4: Add the garlic, almond milk, butter, salt, and pepper to the processor. Paleo Crockpot Chicken Cacciatore

Crock-pot recipes are my lifesaver on busy days! Or any day, because let's be honest the kids are the crankiest around 5pm when you're trying to make dinner. I've made this recipe 2 weeks in a row, it went over so well with my boys. They can be picky eaters, so I can't believe they love this dish so much. The recipe comes from Paleo Hacks .  STEP 1: Saute together in a small saucepan until the onions are soft: 2 T of butter or oil 1 large onion, minced 1/4 cup tomato paste 1 1/2 tsp dried oregano 2 to 3 cloves of garlic, minced 1/4 tsp red pepper flakes STEP 2: Place the onion mixture into the crockpot. Stir in the following ingredients: 1 can of diced tomatoes (I use seasoned ones from Aldi to add extra flavor) 1/2 cup of chicken stock (or broth) 2 lb of remini or white mushrooms, cut up 1/2 cup of red wine (optional) - ( I have never used this) STEP 3: Season the chicken with salt and pepper and add them to the crockpot. Barbecue Grilled Chicken

It's finally getting warmer outside, which means it's time to fire up the grill!  One of our new favorite recipes is Against All Grain's Grilled Barbecue Chicken. It's so fast and easy!  I buy thighs, which is always better for grilling with the skin still on.  STEP 1: Pat and coat completely with the following dry rub: 1/3 cup coconut crystals 1/4 cup paprika 1/4 cup chili powder 1 tablespoon garlic powder 1 tablespoon coarse sea salt (I use regular) 1 tablespoon dry mustard 2 teaspoons oregano leaves 2 teaspoons ground cumin 3/4 teaspoon cracked black pepper 1/2 teaspoon cayenne pepper Mix the rub together in a small bowl, pat on the chicken, and save leftovers for next time!  There is always extra, which I love. This week I made 8 chicken thighs, and I still had plenty left. I store it in my spice cupboard and then the next time I make this recipe, it's extra easy and fast.
