Garlic Mashed Cauliflower {"Mashed Potatoes"}

We personally don't eat very many white potatoes... just occasionally. I created my own "mashed potatoes" recipe with cauliflower. The recipe is based off of Against All Grain's from her first book, but I've changed it up a bit. 

Serves 3-4
  • 1 head of cauliflower
  • 1 tablespoon oil (olive or avocado)
  • 3 cloves of garlic, minced
  • 1/4 cup almond milk (regular would work as well)
  • 1 1/2 tablespoons butter or ghee (I use kerrygold)
  • 3/4-1 tsp sea salt
  • Dash of pepper

STEP 1: Cut cauliflower up into florets, cover and steam in a saucepan with 1/2 inch of water for about 10-15 minutes, or until soft. 
STEP 2: While that's cooking, mince your garlic into a small saucepan with 1 tablespoon of oil. Saute for a few minutes.
STEP 3: When your cauliflower is done cooking, drain the remaining water and place it in your food processor. 
STEP 4: Add the garlic, almond milk, butter, salt, and pepper to the processor. Process until smooth. 


Blended up ready to eat!
My boys' unfortunately weren't fans of this. In fact, they shuddered when I made them try it. :)  It has a pretty strong garlic taste. But they really are so good if you like garlic!
I paired the mashed cauliflower with THIS chicken recipe. 
 If it still tastes too much like cauliflower to you, add more butter and/or garlic. That should solve the problem! :)
