Paleo Crockpot Chicken Cacciatore

Crock-pot recipes are my lifesaver on busy days! Or any day, because let's be honest the kids are the crankiest around 5pm when you're trying to make dinner.
I've made this recipe 2 weeks in a row, it went over so well with my boys. They can be picky eaters, so I can't believe they love this dish so much.

The recipe comes from Paleo Hacks

STEP 1: Saute together in a small saucepan until the onions are soft:

  • 2 T of butter or oil
  • 1 large onion, minced
  • 1/4 cup tomato paste
  • 1 1/2 tsp dried oregano
  • 2 to 3 cloves of garlic, minced
  • 1/4 tsp red pepper flakes
STEP 2: Place the onion mixture into the crockpot. Stir in the following ingredients:
  • 1 can of diced tomatoes (I use seasoned ones from Aldi to add extra flavor)
  • 1/2 cup of chicken stock (or broth)
  • 2 lb of remini or white mushrooms, cut up
  • 1/2 cup of red wine (optional) - (I have never used this)


STEP 3: Season the chicken with salt and pepper and add them to the crockpot.
STEP 4: Mix all together and cook on low for 4-6 hours

All ready to eat!
 The first time I made this, it was more like a soup. The second time it wasn't. Not sure what I did different... maybe more tomato paste the 2nd time?

I know this doesn't look overly appetizing, but it has SO much flavor. We had cauliflower "mashed potatoes" with it, and green beans. The recipe will be coming soon for the cauliflower "mashed potatoes." :)
