Pulled Pork

In my opinion, it's hard to find a good crock-pot meal. Well, I found one for you, and it's SO easy!
This recipe comes from Paleo Hacks, and you can find the official recipe HERE. We rarely ever eat pork, so this was a treat for my husband. 😊

Tip: I bought one of those huge pork loin's from Costco. Since it's too large to fit into the crock-pot, I cut it in half and put the other half in the freezer for later. It was 8 pounds, so I had 4 pounds each time. I did a little extra seasonings for more flavor, but not extra of anything else. 

  • 2 to 4 pounds of pork loin
  • 1 large onion, sliced
  • 1/2 cup of beef or chicken stock
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tsp chili powder
  • 1/2 cup honey

STEP 1: Put the pork in the crock-pot and cover with stock. I then patted the spices onto the meat, drizzled the honey, and then added the onions on top.

STEP 2: Turn the crock-pot on low and cook for 8-10 hours. Use two forks to shred the meat.
We put homemade BBQ sauce on top. Since I had leftover sauce from last week, it made this meal really easy. We were in a rush to make and eat supper last night so this is what my plate consisted of:

Pulled pork, roasted broccoli, &  sweet potato fries
(the boys had homemade rolls for their's)
Confession: the sweet potato fries were from a bag(thanks again, Costco), and I will be posting how to roast the broccoli soon. We eat it like candy, we love it so much!
