Cinnamon Muffins
On this snowy day, it's the perfect time to share this delicious Cinnamon Muffin recipe made with almond flour. This is seriously one of my favorites, and I make them often. They are so tasty and moist, and my boys love them!
Yields: 10 muffins
BATTER:
- 2 eggs
- 1/3 cup coconut milk (or plain yogurt)
- 1/4 cup maple syrup
- 1 tsp vanilla
- 2 1/2 cups almond flour
- 1/4 tsp salt
- 1/2 tsp baking soda
STEP 1: Whisk the eggs, milk, maple syrup, & vanilla. Stir in the flour, soda & salt.
STREUSEL:
- 3 tbsp honey
- 2 tbsp coconut oil (or butter)
- 1 tbsp + 1 tsp cinnamon
- 1/4 tsp vanilla
STEP 2: Add the streusel ingredients in a separate bowl.
STEP 3: Fill the muffin tin 1/2 the way, add streusel in the center & fill the rest of the cup.
Bake for 25 minutes @ 315 degrees.

Just a note: I do a lot of shopping at Costco and that's where I get my almond flour!
