Barbecue Grilled Chicken
It's finally getting warmer outside, which means it's time to fire up the grill!
One of our new favorite recipes is Against All Grain's Grilled Barbecue Chicken. It's so fast and easy!
I buy thighs, which is always better for grilling with the skin still on.
STEP 1: Pat and coat completely with the following dry rub:
- 1/3 cup coconut crystals
- 1/4 cup paprika
- 1/4 cup chili powder
- 1 tablespoon garlic powder
- 1 tablespoon coarse sea salt (I use regular)
- 1 tablespoon dry mustard
- 2 teaspoons oregano leaves
- 2 teaspoons ground cumin
- 3/4 teaspoon cracked black pepper
- 1/2 teaspoon cayenne pepper

STEP 2: The key with this recipe is when you're grilling, make sure you do it low and long (Or you'll get some under done chicken.. I know this from experience :). Total cook time on the grill is usually about 35 minutes. For the last 10 minutes of grilling, baste the chicken with barbecue sauce. I make my own from my Meal's Made Simple Cookbook by Danielle Walker. It's sooo flavorful, and isn't full of high fructose corn syrup, and all those nasty sugars... honey is your sweetener. 😊 Let me know if you need help finding a good barbecue recipe, but there is a lot online/Pinterest.

Well I haven't made this yet because I'm just sitting at work reading it today, but it sounds so yummy (even for a non-healthy eater like myself ;)). Can't wait to get more recipes from you!!
