Paleo Cheese Sauce

Against All Grain recently posted this Paleo cheese sauce recipe, and I've been wanting to try it so bad! I made fajitas the other night and made this to go with it. I was surprised at how delicious it was. Especially on a fajita, it gave it that creamy saucy taste I love. Plus, it's hidden veggies for my boys!:) Check out her recipe HERE .  Ingredients: 1 cup peeled and cubed Hannah sweet potato, or other white-fleshed sweet potato (I used regular potatoes. Paleo Chicken Fingers

I've been on the hunt for a good, crispy Paleo chicken finger. These weren't too bad for how easy they are. You bake these in the oven, so it's very mess free... however, you don't quite get the crispiness that way. So when I make these again, I think I would fry them in avocado oil in a skillet. I"ll let you know how I like them done that way... but how could you not? :) This recipe comes from Paleo Hacks.  The only thing I changed, was I needed about double the breading and egg than the recipe called for to coat my tenders well.  Ingredients: 1-1.5 pound chicken breast strips or chicken tenders 2 eggs 1 cup of almond flour 1.5 tsp paprika 1 tsp salt 1/2 tsp ground coriander( I didn't have this on hand, so I skipped this)  and ground cumin Directions: Turn your oven to 425 degrees. Easiest Spaghetti Ever!

Need a quick, healthy meal? I'll give you a few hints how! This spaghetti is soo easy and Paleo and Whole 30 too! I love this as an option when I don't have time to cook. I almost felt embarrassed to post this, since it's not really a "real" recipe. But I thought I'd share the idea. :) Ingredients:  1 jar of homemade or Kirkland marinara sauce Veggie(1 12oz package) or brown rice noodles(I use 2-3 sections of noodles from a package)  1 pound of sausage or seasoned hamburger Directions:           Step 1: Brown 1 pound of hamburger, and add Italian Seasoning, garlic, and salt to your liking. Or, brown 1 pound of sausage and eliminate the seasonings!           Step 2: Boil the noodles of your choice.           Step 3:  Add the cooked meat, noodles, and marinara together in a pot until heated through.  This Marinara is the best! Potato & Sausage Hash

On the Whole 30, we get SO tired of eggs every morning. I discovered a hash recipe that I modified and we absolutely LOVE it. It's so many hidden veggies you don't realize you're eating! You can eat it plain, or with a fried egg on top, which is what I usually do. The original recipe came from  the Against All Grain's cookbook, but I have modified it as my own. :) Ingredients: 1 Tbsp coconut oil or ghee 2 cups sweet or regular potatoes, peeled, diced & cubed 1/2 pound breakfast sausage 3/4 cup diced carrots 1/2 cup minced yellow onion 1 cup finely diced zucchini 1/2 cup chopped mushrooms 1 tsp parsley 1 tsp rosemary 1/4 tsp sea salt black pepper to taste Directions: Step 1: Brown the sausage, empty it out of the pan and put aside.          2: Heat the oil in a large skillet over medium heat.         3: Put the potatoes in the skillet and cook for 5 minutes. Beef Cauliflower Fried Rice

Oh my, this is SO good! Who says food on the Whole 30 has to be tasteless? This is the exact opposite... it is full of flavors, and makes your house smell like a Chinese restaurant too! I just got done making and eating this, and had to share it right away. :) My kids love steak, so they loved this. Once again, it's from Against All Grain. Her recipes never disappoint me! As usual, I changed a few things from the original recipe.  Ingredients:  1 pound Top Sirloin, cut into 1/2 inch cubes 6 Tbsps coconut aminos 2 Tbsps toasted sesame oil 1/3 cup avocado oil 1 small onion, minced 3 cloves garlic, minced 2 tsps minced fresh ginger (I'm sure it doesn't have to be fresh) 2 medium carrots, diced 3 1/2 cups riced cauliflower  2 large eggs 1 1/4 tsp sea salt 1/3 cup frozen peas 2 green onions, chopped Directions:      Step 1: Mix the Sirloin in a bowl with 1 Tbsp coconut aminos and 1 tsp sesame oil.                2

The BEST Gluten Free Cupcakes

Last month was my Mom's birthday. She loves white cake and white frosting, so I was determined to find a good gluten free cupcake recipe that wasn't dry. I think I found it! This isn't a healthy dessert, as I wasn't going for that. I was going for taste and texture. The recipe comes from Gluten Free On A Shoestring .  Ingredients: 8 tbsp butter, at room temperature 1 cup sugar 1 egg, & 1 egg white (it said room temperature, but mine wasn't) 2 tsp vanilla 1 1/2 cups all purpose gluten-free flou r (I used "cup 4 cup" brand, here is the link on Amazon) 3/4 tsp xanthan gum (IF your blend doesn't already contain it, but most do) 2 tbsp cornstarch 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp kosher salt (I used sea salt) 2/3 cup milk or buttermilk (I used buttermilk. Curry Chicken Salad

Yum! This Curry Chicken Salad is one of our favorites while on the Whole 30. It is soo tasty. I never used to like curry, but it's amazing how your tastebuds can change when your foods are so limited! I've had a lot of requests to share this recipe, so here you go! It's from Against All Grain's cookbook, and she also has it posted on her website HERE . However, I have changed it up a bit from her recipe(I add more veggies than she had!) so here is my version! Ingredients:  2 pounds skinless, boneless chicken breasts, shredded (I used 6-7 cups of rotisserie chicken from Costco to make it even easier!) 1/2-3/4 cup of compliant mayo*  (See note, and add to your liking. Roasted Sweet Potatoes

Yummm, these Roasted Sweet Potatoes are our favorite side dish! Thanks to my sister-in-law, Rhea, for introducing these to me. I craved these when I'm on the Whole 30. They are such a treat if you like sweet potatoes!  My husband loves to cut them up in tiny squares, because they crisp up better. Sweet potatoes actually crispy? Yes, with this recipe it's possible! Tiny squares is the key... forget the fry shape. :)  Now, I wish I had exact quantities of ingredients for how I make these, but I don't. I do it very similarly to how I roast broccoli. I just kind of wing it. Ingredients: Sweet Potatoes Avocado Oil (or Olive Oil) Salt Garlic Powder Instructions: Step 1: Choose however few or many potatoes you want to make; peel, and dice up in small squares.         2: Spread them out on a large sheet pan.
