Potato & Sausage Hash

On the Whole 30, we get SO tired of eggs every morning. I discovered a hash recipe that I modified and we absolutely LOVE it. It's so many hidden veggies you don't realize you're eating! You can eat it plain, or with a fried egg on top, which is what I usually do. The original recipe came from  the Against All Grain's cookbook, but I have modified it as my own. :)


Ingredients:
  • 1 Tbsp coconut oil or ghee
  • 2 cups sweet or regular potatoes, peeled, diced & cubed
  • 1/2 pound breakfast sausage
  • 3/4 cup diced carrots
  • 1/2 cup minced yellow onion
  • 1 cup finely diced zucchini
  • 1/2 cup chopped mushrooms
  • 1 tsp parsley
  • 1 tsp rosemary
  • 1/4 tsp sea salt
  • black pepper to taste

Directions:

Step 1: Brown the sausage, empty it out of the pan and put aside. 
        2: Heat the oil in a large skillet over medium heat.
        3: Put the potatoes in the skillet and cook for 5 minutes. Add the sausage, carrots, and onion. Continue cooking for 10 minutes or until the vegetables soften.
        4: Add the remaining ingredients and cook for 6 to 8 minutes longer, or until the mushrooms and zucchini are tender.

Enjoy plain, or with a fried egg on top! 
Yields: 4 servings
