Curry Chicken Salad
Yum! This Curry Chicken Salad is one of our favorites while on the Whole 30. It is soo tasty. I never used to like curry, but it's amazing how your tastebuds can change when your foods are so limited! I've had a lot of requests to share this recipe, so here you go! It's from Against All Grain's cookbook, and she also has it posted on her website HERE. However, I have changed it up a bit from her recipe(I add more veggies than she had!) so here is my version!
Ingredients:
- 2 pounds skinless, boneless chicken breasts, shredded(I used 6-7 cups of rotisserie chicken from Costco to make it even easier!)
- 1/2-3/4 cup of compliant mayo* (See note, and add to your liking. I add until it's the moistness I want)
- 1/2 cup grapes, halved
- 1/2 cup cashew halves, toasted* (See note, and toasting the cashews makes it, I promise!)
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 1/2 cup finely shredded carrots
- 1/2 tsp sea salt
- The following Spice Mix recipe, OR 2 Tbsp Curry Powder
Curry Spice Mix:
- 2 tsp cumin
- 2 tsp coriander
- 1 1/2 tsp tumeric
- 1 1/2 tsp ground ginger
- 1 tsp ground mustard
- 1/2 tsp cardamom
- 1/2 tsp ground fenugreek (I've never added this)
- 1/4 tsp cayenne pepper
I have made this both ways, with the spice mix and also with the curry powder. I will say, it's slightly better with the spice mix, but obviously some of those spices everyone may not have on hand.

Mix all the ingredients together in no special order, and let it chill in the refrigerator for 30 minutes before eating. I have also froze this, which worked well I thought. The only thing was, the nuts lost their crunch, and the grapes were slightly soggy. I didn't mind either, but just a heads up.

*Side note about the mayonnaise. If you're on the Whole 30, you will need to make your own compliant mayo. Or another option is this. I use this mayo, even though there is a tiny bit of honey in it, I call it ok for me. I get mine at Costco, but it's also on Amazon.
*As far as the cashews, I buy raw cashews, and toast them myself in a skillet, sometimes with a little ghee or coconut oil
