Paleo Cheese Sauce
Against All Grain recently posted this Paleo cheese sauce recipe, and I've been wanting to try it so bad! I made fajitas the other night and made this to go with it. I was surprised at how delicious it was. Especially on a fajita, it gave it that creamy saucy taste I love. Plus, it's hidden veggies for my boys!:)

Ingredients:
- 1 cup peeled and cubed Hannah sweet potato, or other white-fleshed sweet potato (I used regular potatoes. She says orange sweet would work too, but would it give it a sweeter taste)
- 1/2 cup peeled & diced carrots
- 1 1/4 cup chicken bone broth (regular broth or chicken stock would work fine)
- 3 Tbsp melted Ghee (make sure it's melted.)
- 1 Tbsp nutritional yeast
- 2 1/2 tsp sea salt
- 2 gloves garlic, peeled
- 1/4 cup fresh store-bought roasted tomatillo salsa (mine was not fresh, it was canned :)
- 3 tsps arrowroot powder, OR 2 tsp tapioca starch
Directions:
Step 1: Put the potatoes, carrots, chicken stock, ghee, nutritional yeast, sea salt, garlic cloves, and salsa in a pan or skillet.
Step 2: Bring to a boil, then cover and reduce heat to medium-low. Cook for 15 minutes, until the vegetables are fork tender.
Step 3: Blend, carefully add the arrowroot powder, then return to the skillet and cook over medium-high heat until thickened, whisking constantly. (Mine did not take very long to thicken at all)
