Roasted Sweet Potatoes

Yummm, these Roasted Sweet Potatoes are our favorite side dish! Thanks to my sister-in-law, Rhea, for introducing these to me. I craved these when I'm on the Whole 30. They are such a treat if you like sweet potatoes! 
My husband loves to cut them up in tiny squares, because they crisp up better. Sweet potatoes actually crispy? Yes, with this recipe it's possible! Tiny squares is the key... forget the fry shape. :) 

Now, I wish I had exact quantities of ingredients for how I make these, but I don't. I do it very similarly to how I roast broccoli. I just kind of wing it.

Ingredients:
  • Sweet Potatoes
  • Avocado Oil (or Olive Oil)
  • Salt
  • Garlic Powder


Instructions:

Step 1: Choose however few or many potatoes you want to make; peel, and dice up in small squares.
        2: Spread them out on a large sheet pan. The more layered they are, the less they will crisp up.
        3. Drizzle avocado(or olive) oil over the top, sprinkle with garlic powder & salt. (If you want a little kick to them, add some cayenne pepper as well!)
        4: Bake in a 425 degree oven, for 1 hour. I stir them after 25 minutes, and more frequently towards the end. I will warn you! At 1 hour, they are plenty done, as we like them border line burnt. 😀 But they're crispy that way! So really watch them the last 15 minutes, so you can eat them the way you desire to!



Once again, sorry for my blogging absence. We've been traveling and so busy... I have lots of recipes to share with you, because even though we're busy, I still have to cook for my family. :) We're doing the Whole 30 right now, so I will have lots of those dishes coming up soon!
