Paleo Chicken Fingers
I've been on the hunt for a good, crispy Paleo chicken finger. These weren't too bad for how easy they are. You bake these in the oven, so it's very mess free... however, you don't quite get the crispiness that way. So when I make these again, I think I would fry them in avocado oil in a skillet. I"ll let you know how I like them done that way... but how could you not? :)
This recipe comes from Paleo Hacks. The only thing I changed, was I needed about double the breading and egg than the recipe called for to coat my tenders well.
Ingredients:
- 1-1.5 pound chicken breast strips or chicken tenders
- 2 eggs
- 1 cup of almond flour
- 1.5 tsp paprika
- 1 tsp salt
- 1/2 tsp ground coriander(I didn't have this on hand, so I skipped this) and ground cumin
Directions:
- Turn your oven to 425 degrees. Line a baking sheet with parchment paper
- Mix the almond meal with your spices in a bowl
- Beat your eggs in a separate bowl
- Pat the chicken dry and then dip each piece into the egg and then the almond mixture. Make sure to coat it on all sides. Lay the chicken pieces onto the baking sheet
- Bake for 18-20 minutes, turning once or possibly even twice.
I made my own homemade ranch with these, but it was not very good to be honest.
I think the Spicy Cream Sauce that I previously posted HERE would taste amazing with them!
