Chocolate Avocado Blueberry Muffins

Time for another baking recipe. Wow... are these delicious! My boys devoured them. They are so moist and honestly could be a healthy cupcake if you wanted to put a little frosting on top! This recipe(& picture) comes from Paleo Hacks.   This is gluten free & dairy free, as long as you use dairy free chocolate chips. I love "Enjoy Life" brand for the dairy free chips. Ingredients: 2 eggs 1 ripe avocado 1/3 cup coconut sugar 1/4 tsp salt 1/3 cup raw cacao powder + 1 TBSP  (I used regular cocoa powder because that's all I had) 2 tsp baking powder 2 tbsp coconut flour 1 cup almond flour 1/2 cup unsweetened almond milk 1/4 cup fresh or frozen blueberries 2 tbsp dark chocolate chips (or chips of your choice) Directions: Step 1: Preheat oven to 375 degrees. Loaded Chicken & Potato Casserole

I'm finally back, after a week long break. That's what happens when it's near the end of tax season, and I'm working on some others taxes. Glad those are done. 😅 We never eat casseroles, but boy was this good! AND this is Whole 30 compliant! Even better!  This came from Jessie B's website .  Originally when I looked at the recipe I thought it seemed easy, but honestly there is a lot of steps. I wouldn't put this in the "quick and easy" category, but definitely in the "treat" category. The 3 year old ate it great without the spicy sauce. The 1 year old not so much. I think it was too spicy for him. Caramel-Pecan Sticky Buns

I made these {Paleo} Caramel-Pecan Rolls for our Good Friday brunch. They were delicious... I could hardly believe they were paleo friendly. That's why I love about the "Against All Grain " series of cookbooks. This one came out of the Celebrations book, click here to view on Amazon. The Celebrations cookbook is full of recipes for those special treats you don't get to eat any more otherwise. Like caramel and cinnamon rolls, pigs in a blanket, cornbread, delicious appetizers, the list goes on and on. Plus they are gorgeous books with gorgeous pictures! Unfortunately I can't share this recipe with you online. But I'm telling how wonderful they were and you should try them if you have her cookbook!  ....... The only thing I would do differently is cook the caramel for less time, and also bake the rolls for a shorter time as well. (maybe like 5 minutes less for both?) They were a little too overdone. Gluten Free Puff Pancake

Time for a breakfast recipe! I love this one because it's packed with protein for the boys. They eat eggs fairly well, but sometimes we need to switch it up. This isn't paleo, but you can easily make it gluten free and dairy free, and I bet people won't even notice. :) 9 eggs 1 cup of milk (regular or almond) OR 1/2 cup milk, 1/2 cup cottage cheese 1 scant cup GF flour blend*  (I use Costco's gluten free blend, but any cup 4 cup flour works!) 1 tsp salt 2 tsp vanilla STEP 1: Pour all ingredients into the blender and mix.            2: Spray 9x13 pan and melt 2-3 tbsp of butter in the pan in the oven while it is preheating.                                                                        (Ghee works well too)             3: After the butter is melted, pour the blender mixture in the pan and bake at 400 degrees for     20 minutes or until puffy. It's so easy and lasts us 2-3 mornings! The boys inhale it. :) *You can use regular

Paleo Crock-Pot Mongolian Beef

Yay for another delicious crock-pot recipe.. A delicious homemade "Chinese" dish. I rarely make things like this, so this was a treat for us. The original recipe can be found at once a month mea ls website. But as usual, I did a few different things. 😊 1.5 pounds flank steak, sliced (I used sirloin steak) 1/4 cups arrowroot powder 2 tablespoons oil (or avocado oil) 1/2 tsp peel and minced ginger, fresh (I'm sure ground ginger would work just fine as well) 3/4 cups coconut aminos (regular soy/tamari sauce would work if you don't care about being paleo compliant) 3/4 cups honey 3/4 cups water 3/4 cup grated carrot 2/3 cup diced green onions Step 1: Coat the steak pieces in arrowroot powder          2: Add remainder of ingredients to the crock-pot and stir well to combine          3: Cook on high for 2-3 hours or low for 4-5 hours We had ours with cauliflower rice and roasted broccoli. Lemon Basil Chicken- Sheet Pan

This recipe is so easy! I made this on Whole 30 a lot, and continue to because we love it so much. All that to say, I have to admit when I started eating this way, it took some time to enjoy a meal like this. It's pretty basic with just some oil and seasonings... it's not a saucy, melt in your mouth dish. Although it has great flavor I think! You're supposed to fit this all onto one sheet pan. However, I usually do extra and have to split it into two pans. The recipe comes from HERE , but I have changed it up a bit, so here is my version. 1.5 lbs chicken breast cut into strips (But thighs stay a lot more moist in this recipe!) 1/3 cup avocado oil or olive oil Juice of 1 lemon 3 tbsp basil (you can use dried or fresh) 1 large clove garlic, minced 1/2 tsp salt + more to taste 3 large potatoes skinned & chopped into small pieces 1 tsp lemon pepper (optional) Step 1: Preheat your oven to 375 degrees.          2: Make your marinade: oil, lemon juice
