Paleo Crock-Pot Mongolian Beef
Yay for another delicious crock-pot recipe.. A delicious homemade "Chinese" dish. I rarely make things like this, so this was a treat for us. The original recipe can be found at once a month meals website. But as usual, I did a few different things. 😊
- 1.5 pounds flank steak, sliced (I used sirloin steak)
- 1/4 cups arrowroot powder
- 2 tablespoons oil (or avocado oil)
- 1/2 tsp peel and minced ginger, fresh (I'm sure ground ginger would work just fine as well)
- 3/4 cups coconut aminos (regular soy/tamari sauce would work if you don't care about being paleo compliant)
- 3/4 cups honey
- 3/4 cups water
- 3/4 cup grated carrot
- 2/3 cup diced green onions
Step 1: Coat the steak pieces in arrowroot powder
2: Add remainder of ingredients to the crock-pot and stir well to combine
3: Cook on high for 2-3 hours or low for 4-5 hours
We had ours with cauliflower rice and roasted broccoli. If you haven't tried cauliflower rice, I suggest you do! Especially with a saucy meal like this, you can't even taste it mixed in and you get extra veggies. I will be posting a recipe soon, but honestly for this dish I didn't do anything but salt and pepper because of the sauce from the beef.
*I apologize for the poor picture taking. 🙈 Usually supper is a chaotic time of day, and I just quickly snap before serving! I'm just glad I remember before eating it most times! :)
