Gluten Free Puff Pancake

Time for a breakfast recipe! I love this one because it's packed with protein for the boys. They eat eggs fairly well, but sometimes we need to switch it up. This isn't paleo, but you can easily make it gluten free and dairy free, and I bet people won't even notice. :)


  • 9 eggs
  • 1 cup of milk (regular or almond) OR 1/2 cup milk, 1/2 cup cottage cheese
  • 1 scant cup GF flour blend* (I use Costco's gluten free blend, but any cup 4 cup flour works!)
  • 1 tsp salt
  • 2 tsp vanilla

STEP 1: Pour all ingredients into the blender and mix.
           2: Spray 9x13 pan and melt 2-3 tbsp of butter in the pan in the oven while it is preheating.                                                                       (Ghee works well too)
           3: After the butter is melted, pour the blender mixture in the pan and bake at 400 degrees for     20 minutes or until puffy.



It's so easy and lasts us 2-3 mornings! The boys inhale it. :)


*You can use regular flour as well, it doesn't have to be gluten free. If doing that, use an entire 1 cup, not a scant cup.
