3 year update

     Can you believe I've had this blog for 3 years? I know I'm not real consistent with publishing new content, but, that doesn't mean that I'm not continually cooking the Paleo way and trying new recipes. Cooking healthy meals for me and my family is definitely a hobby of mine. I also feel passionate with helping others eat well for their health- and that passion continues to grow and this is why!


2 weeks ago I just had my routine endoscopy done, which happens every 3 years.

In 2013 I was diagnosed with atrophic gastritis at Mayo Clinic. Since then, I have found a GI Dr. in the Peoria area that does my endoscopies. In 2018, they said it looked so much better than 5 years before(I went awhile without one because of having my 2 boys), but there was one area of concern. But the biopsies came back fine.  Although he said with this gastritis diagnosis, that part of my stomach may need to be removed eventually. His advice was "keep doing what you're doing." That's when this blog was started. :)


Now in 2021, 3 years later, he said it looks even better than before. Is it perfect? No, but there is nothing concerning and it has continually improved little by little over the last 8 years. First of all, Praise God for his healing, and second of all, Praise God that I have found something that keeps it under control! 

So how have I kept it under control? I eat Paleo 80% of the time, and always gluten free. This past year I was also Dairy Free with no exceptions which I think was good for my gut. I typically do a whole30 once a year as well. 

I just want to encourage anyone out there with health issues, or if you just don't feel well, that food could be your answer. You won't see overnight results, but slowly over time I'm sure it will benefit you in some way. I told my Dr. when I was half out of it from the anesthesia they gave me that "food is my medicine." Hahaha :) But it's very true. There is no medication I can take to make this better, the only thing that has is the food I consume.


If anyone ever wants to chat about their health, recipes, or food, I sure would love to! It may be my dream some day to be a health coach(functional medicine?) of some sort, or try to get GI Dr's to recommend food/diet as their patient's medicine. :) It's a foreign concept in the Medical world! 
I know some people think I'm crazy, but when you learn and have experienced a good thing, you want all the world to know! :) 

So this is MY very small corner of the world to share my experience, results, and recipes with you all!
