Paleo Cinnamon Roll Coffee Cake
Yum, this is one of the best coffee cakes I've ever made. I made this awhile ago, but it looks even better now because I'm on the whole 30 right now! 😃

Paleo Cinnamon Roll Coffee Cake
Ingredients:
Cinnamon Sugar Mixture-
- 1/4 cup coconut sugar
- 2 tsps cinnamon
Coffee Cake-
- 3 cups almond flour
- 1/4 cup coconut flour
- 1/2 tsp baking soda
- 2 tsps baking powder
- 1/2 tsp salt
- 1/2 cup coconut oil room temperature
- 3/4 cup coconut sugar
- 3 eggs
- 1 tsp vanilla extract
- 1/2 cup almond extract
- 1 Tbsp coconut oil for after baking
Glaze-(I did make this, but personally, I don't think it's worth the work, and makes it taste very coconuty. Plus it's hard to find coconut butter.)
- 1/4 cup coconut butter
- 2 Tbsps honey
- 1 tsp vanilla extract
- 2-3 Tbsps almond milk
Directions:
Step 1: Make the cinnamon sugar mixture in a small bowl. Mix well and set aside.
Step 2: Preheat the oven to 325 degrees and line a 9x9 square pan with parchment paper.
Step 3: Make the coffee cake; In a medium bowl, combine the almond flour, coconut flour, baking soda, baking powder, and salt. Stir until evenly mixed.
Step 4: In a large bowl, combine the coconut oil and coconut sugar and mix until combined. Add the eggs, vanilla, and almond milk and stir until smooth.
Step 5: Add the dry ingredients to the wet ingredients and stir well, making sure no dry spots remain.
Step 6: Pour half of the batter into the prepared pan and sprinkle two thirds of the cinnamon sugar mixture on top. Carefully scoop the remaining batter on top, making sure all the cinnamon sugar is covered.
Step 7: Bake for 35 minutes.
Step 8: As soon as it comes out of the oven, take the 1 Tbsp of coconut oil and spread it on top then sprinkle with the remaining cinnamon sugar mixture.
Step 9: While the cake is cooling, make the glaze: in a small bowl, combine the coconut butter, honey, vanilla extract, and almond milk. Mix until smooth and thin enough to drizzle on the cake. Once the cake has cooled, top with glaze.
(Confession, my glaze did not turn out like her picture, it was quite runny...thus why it doesn't look like I have frosting on it below.)
