Paleo Lemon Butter Chicken

Yum, we all loved this recipe, even the boys! This Paleo Lemon Butter Chicken is even Whole 30 approved as well, if you don't mind that there is Ghee in it! I used the skin-on chicken thighs from Costco. This recipe takes no time at all!

Paleo Lemon Butter Chicken

Ingredients:

  • 8 chicken thighs, bone-in, skin-on
  • 1 lemon, zested and juiced
  • 3 Tbsps ghee
  • 1/4 cup coconut cream
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 Tbsp chopped fresh rosemary

Directions:

      Step 1: Preheat the oven to 375 degrees and place the chicken thighs skin side down in a 9x13 pan

      Step 2: Sprinkle lightly with salt then flip over so the skin side is up. Set aside.

      Step 3: In a medium saucepan, combine lemon zest and juice, ghee, coconut cream, garlic powder, salt, and rosemary.

     Step 4: Stir over medium heat until everything is well combined.

     Step 5: Pour the mixture over the thighs and bake for 40-45 minutes or until they reach 165 degrees. If you want the skin crispy, turn up the oven to 500 degrees and bake for another 5-10 minutes.
