Sweet & Sour Meatballs
Alright, I've been on the hunt for more beef recipes! This one was a success for us! I love sweet & sour meatballs, but usually they are packed with brown sugar, etc. These are so easy, and you can put them in the crockpot to keep them warm!
This recipe comes from Against All Grain. Add some cauliflower rice with it, because there's lots of extra sauce!
Sweet & Sour Meatballs
Sauce Ingredients:
- 3 cups tomato puree
- 3/4 cup unsweetened pineapple juice
- 1/3 cup honey (if you're doing the whole 30, just omit this!)
- 1/3 cup coconut aminos (soy/tamari sauce can be a substitute)
- 1/4 cup tomato paste
- 2 Tbsps apple cider vinegar
- 2 Tbsps dijon mustard
- 1.5 tsp sea salt
- 1/2 tsp ground ginger
- 1/2 tsp onion powder
Meatballs:
- 2 small sweet onions, quartered
- 2 eggs
- 1/4 cup almond flour, or 2 Tbsps coconut flour
- 2 pounds ground beef, chicken, turkey, or pork
- 1 Tbsp sesame oil
- 1.5 tsp ground ginger
- 2 tsps sea salt
Directions:
Step 1: Preheat oven to 350 degrees.
Step 2: Make the sauce first by combining all of the ingredients in a large pot. Bring to a low boil then reduce the heat to medium-low and let it simmer uncovered for 45 minutes, until thickened. Meanwhile, make the meatballs.
Step 3: Place the onion in a food processor and pulse until finely minced. Then add the egg, almond flour/meal, beef, oil, ginger, and sea salt. Pulse until fully combined.
Step 4: Roll the mixture into small bite-sized meatballs. Space them evenly on two rimmed baking sheets and bake for 12 minutes, turning once.
Step 5: Once the sauce has thickened, transfer it and the meatballs to the slow cooker set to low. Cover until ready to enjoy.
