Maple Garlic Glazed Chicken

Yum, Yum! This recipe is so delicious and so easy! I found this one via Pinterest, and wasn't disappointed at all, and it's Paleo! I used the skin-on, bone-in, chicken thighs from Costco. I paired the chicken with roasted brussel sprouts with balsamic vinegar drizzled on top.  Maple Garlic Glazed Chicken Ingredients: 6 bone-in skin-on chicken thighs 1/4 cup maple syrup 2 Tbsps coconut aminos (or soy/tamari sauce) 1 Tbsp apple cider vinegar 1 Tbsp finely minced garlic 1 Tbsp finely grated fresh ginger* 1/2 tsp ground pepper Directions: Whisk together all marinade ingredients. Put the chicken in a freezer bag or a marinating container and pour the marinade over. Turn to coat well. Refrigerate for at least 2 hours or overnight.  Preheat oven to 375 degrees. Line a baking sheet with foil and lightly coat with oil to prevent sticking. Place the chicken parts skin side down on the foil. Bake for 25 minutes. Remove from oven and carefully turn chicken ov

Pumpkin Chocolate Chip Muffins/Bread

Another fall recipe for you! These Pumpkin Chocolate Chip Muffins from Against All Grain can be made into muffins or bread. They are delicious, however I thought they were a little strong on the nutmeg and ginger, so I would cut those back a little next time. Alright, I've been on the hunt for more beef recipes! This one was a success for us! I love sweet & sour meatballs, but usually they are packed with brown sugar, etc. These are so easy, and you can put them in the crockpot to keep them warm! This recipe comes from Against All Grain.   Add some cauliflower rice with it, because there's lots of extra sauce! Pumpkin Bars with Cream Cheese Frosting

Today's recipe comes to you from Mel's Kitchen Cafe. The only thing I did differently was replace the regular flour with a gluten-free blend, and cut the sugar in half! These turned out super well and were very moist. This is definitely not a healthy dessert, but so tasty if you need a gluten-free option! Wow... it's been so long. Sorry for the absence! Life has been so crazy busy, I haven't had time to try new recipes. I've just been cooking from my favorites that are already on the blog(one of the reasons I do my blog... for my own reference!). But, it's FALL...  my favorite time of the year. So it's time for everything pumpkin and apple! I've never just loved pumpkin, but I do have a few to share with you that I DO love!
