Banana Breakfast Bread

This bread is so good and filling... and it's Paleo which is even better! It's so full of protein, that it can be a quick breakfast all on it's own! I typically don't like bananas, but I love this. Thanks to Heather B for the recipe. I personally put pecans and chocolate chips in it, but those are optional!

Banana Breakfast Bread

Ingredients:
  • 4 bananas (2.5 cups)
  • 6 eggs
  • 1/2 cup almond butter
  • 4 Tbsp coconut oil
  • 1/2 cup coconut flour
  • 1 Tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • dash of salt
  • Chocolate chips (optional)
  • Pecans (Optional)

Directions:

     Step 1: Mix all ingredients in a blender (it's slightly thick for this, but it works), food processor, or hand mixer.

     Step 2: Pour into a bread pan and bake at 350 for 45-55 minutes.
