Paleo Waffles
Henry's favorite breakfast are waffles. I used to use a regular waffle recipe, and use a gluten free flour blend in place of the regular flour. However, I've been on a hunt for a good Paleo waffle recipe, that's nice and crispy on the outside, but soft in the inside. Not to mention, much healthier! Well folks, I think I found it! THIS recipe comes from "nurture my gut's website." It's the best Paleo waffle recipe I've tried.
Paleo Waffles
Ingredients:
- 1 cup almond flour
- 1 cup tapioca flour
- 2 Tbsp coconut flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 1/4 cup melted coconut oil or grapeseed oil (I used refined coconut oil, for less coconut taste)
- 1 tsp apple cider vinegar
- 1 cup almond milk
- 1/2 tsp vanilla
- 2 Tbsp coconut sugar*
*Note on the sugar. I misread coconut flour.. and put coconut sugar in it instead...and the flour too of course. 🙈 So I guess you could consider the sugar as an optional ingredient. :)
Directions:
Step 1: Place all the dry ingredients in a mixing bowl and whisk until all lumps are removed.
Step 2: Add liquid ingredients and whisk until the batter has thickened. Batter will be similar to pancake batter.
Step 3: Spray or coat the waffle maker with a thin layer of oil. Fill the waffle maker. I know each maker is different, but I put mine on the highest setting and let it do two beeps that it was done. I wanted them extra crispy and done. ;)

ReplyDeleteI still make these regularly! I love to use ghee for the coconut oil & maple sugar instead of coconut sugar.... makes them extra delicious I think :) I’ve also swapped out the almond flour for almond pulp if I have it on hand and it works well! Just decrease the milk a bit.
